Donald Butler (Duck) is a native of New Orleans and grew up dining in (and later working in) some of the great restaurants of south Louisiana. As a student at LSU he fell in love with sport fishing and set off to see the world as a professional sport fisherman. He’s captained boats and fished in places such as Tanzania (East Africa), Costa Rica, California, Panama, Guatemala, Hawaii, Madeira (Portugal) and many more.
These global influences along with his Louisiana heritage and love of good food culminated to create the menu for his newest adventure: The Duck Wagon. The Duck Wagon is a 27 mobile food trailer customized with the latest in modern culinary gadgets. This roving kitchen serves a southern comfort menu unlike any in the area. Open Monday through Friday from 10:30 to 2 he creates daily specials such as the Cajun classics jambalaya and smothered okra as well as the best southern favorites like meatloaf, collard greens, cornbread, macaroni/cheese and mashed potatoes. It is home cooking at its best!
